Halloween Fun!

Want to know how to crush a child's spirit. Hack her new favorite toy to pieces and then light it on fire in front of her. Traumatic I now know. That is what happened in our house. Three weeks ago we ventured out to the pumpkin patch and my daughter picked out her perfect pumpkin and there it sat in our living room for the last few weeks and she loved it.

Well last night we decided to finally make a Jack-o-lantern and she hated every second of it.When we put her next to it for a picture she cried. Poor girl, we ruined her favorite toy. Good thing she is 16 months old and will get over it.
Not my best work, but it was I think the first pumpkin I have carved since I was 8. However, a fun little tip, if you are like me and want it lite even when you are not home, put a glow stick inside. It is safe and the different colors make it a fun little twist.

After the carving came my husband's favorite roasted pumpkin seeds.

So easy to do! First you need to wash off all of the pumpkin gunk and let dry. I did not realize how long that actually took. Then after all dry, toss in 1-2 tbsp of olive oil and then salt. I roasted mine at 425 for about 30 mins. Delicious.

I wanted to do something a little fun and festive for Halloween, so I made Jack-o-lantern waffles. The waffles were orange! Now they are not my best work, but I think not to shabby for a first attempt.

Happy Halloween!
